3 ingredients, no bake blue matcha cashew butter cups. They’re creamy, gorgeous, and loaded with antioxidants, thanks to matcha and Elavi's Blue Vanilla Frosting. Bonus? No refined sugar, no hydrogenated oils—and all natural colors from powerful superfoods. It's like a mermaid and a peanut butter cup had a love child.
What You’ll Need:
- 2 cups vanilla yogurt (dairy or dairy-free)
- 1-2 tbsp matcha powder
- 1 tsp Elavi Blue Vanilla Frosting Cashew Butter (put it in the fridge for 1 hour prior to thicken)
How to Make Them:
- Stir matcha powder into vanilla yogurt until fully combined.
- Spoon a layer into silicone molds or a muffin tin lined with cupcake liners.
- Dollop a spoonful of chilled Elavi Blue Vanilla Cashew Butter into the center of each cup.
- Cover with another layer of matcha yogurt and smooth the tops.
- Freeze for at least 1 hour.
- Enjoy and store extras in the freezer (if they last that long!).
