Ingredients (Makes 10 pops)Blueberry Layer:
  • 2/3 cup of blueberries
  • 2/3 cup of Greek yogurt (or coconut yogurt)
  • 1/3 cup of Elavi Blue Vanilla Frosting Cashew Butter
  • 1/4 cup of granulated monk fruit
  • 3/4 cup of unsweetened almond milk
Matcha Layer:
  • 1/2 cup of Greek yogurt (or coconut yogurt)
  • 1/4 cup of unsweetened almond milk
  • 1 tsp of vanilla extract
  • 1/4 cup of granulated monk fruit
  • 1 tbsp of matcha powder
Coating:
  • 1 cup of sugar-free white chocolate
  • 1 tbsp of coconut oil
  • 1 tbsp of freeze-dried strawberries
What to do:
  1. Blend the Blueberry Layer: Mix blueberries, yogurt, Elavi Vanilla Cashew Butter, monk fruit, and almond milk until smooth
  2. Blend the Matcha Layer: Combine matcha, yogurt, almond milk, vanilla extract, and monk fruit
  3. Layer: Pour the blueberry mix into silicone popsicle molds, then top with the matcha layer
  4. Freeze: Insert sticks and freeze overnight
  5. Dip: Melt white chocolate with coconut oil. Dip or drizzle popsicles, then top with crushed freeze-dried strawberries
