Picture this: your fav candy bar just got a superfood-rich, glow-up. This combo will not disappoint! Made with real ingredients like dates, raspberries, and Elavi’s Blue Vanilla Frosting Cashew Butter (hi, antioxidants), this no-bake candy bar dupe is vegan, gluten-free, and perfect for those 3pm “I need a sweet treat right now” moments.
What You Need:
- 15 pitted dates
- 1 tbsp coconut oil
- 1/3 cup peanut butter
- Pinch of sea salt
- 1–2 tbsp water (for blending)
- 1 cup raspberries
- 2 tbsp chia seeds
- Melted chocolate (your fave kind!)
- Elavi Blue Vanilla Frosting Cashew Butter (aka the magic ingredient)
What to Do:
- In a food processor, combine the pitted dates, coconut oil, peanut butter, sea salt, and a splash of water. Blend until smooth and sticky.
- Flatten your date “dough” onto a parchment-lined tray and roll it thin. Pop it in the fridge to chill for 30 minutes.
- While that chills, mash together the raspberries and chia seeds until combined
- Pull out your chilled date base and spread on a generous layer of Elavi Blue Vanilla Cashew Butter. Then top with your raspberry chia jam. Back in the fridge it goes for another 30 minutes
- Slice + dunk: Once firm, slice into bite-sized squares, dunk in melted chocolate, and place on parchment paper
- Freeze for 1 hour (if you can wait that long), then enjoy your new favorite candy bar!
